This is the sort of cake that when the phone rings and a friend pops over you can have on the table in a jiffy!


  • 2-3 medium sized apples peeled,cored and sliced
  • 125 gm unsalted butter
  • 2/3 cup caster sugar
  • 2 large free-range eggs
  • 1 teaspoon vanilla extract
  • 3 tablespoons of Amaretto di Saronno
  • 1 cup plain flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon of salt
  • 1/3 cup of brown sugar
  • 1 tablespoon of cinnamon


  • Prepare a 20 cm springform cake tin- lining it with baking paper on the bottom and sides
  • Sprinkle with brown sugar and cinnamon then place slices of apple in a clock pattern around the cake
  • Preheat oven to 170 degrees
  • In a food processor beat the caster sugar and butter together until it is light and fluffy.
  • Add eggs one at a time until combined then add in vanilla and amaretto
  • Fold through flour, baking powder and salt
  • Spoon batter over the apples and brown sugar and bake in the oven for 35-40 minutes
  • Serve warm or cool with whipped cream
