Batter 

½ cup potato starch flour

¼ teaspoon salt

1 cup soy milk

Pinch white pepper 

Breadcrumbs 

2 slices day old bread

⅓ cup nutritional yeast

½ teaspoon mustard powder 

1 teaspoon smoked paprika 

1 teaspoon chicken salt

1 teaspoon cajun spice mix or

(¼ teaspoon ginger, pinch cumin, garlic powder, onion powder, cayenne, oregano, black pepper)

½ cauliflower cut into florets – steamed for 10 mins

Method 

Steam cauliflower for 8-10 minutes. Remove from heat. 

In a food processor add 2 slices of bread and blitz until it resembles breadcrumbs. 

Add nutritional yeast and all other ingredients and blitz again to mix.

For the batter, mix all ingredients together in a medium bowl until smooth. 

Remove steamed cauliflower and cut into florets. 

Dip florets into batter and then immediately roll into breadcrumbs until covered.

Repeat until all cauliflower is coated. In small batches on a single layer place cauliflower on to the basket, set the airfryer to 200 degrees and cook the cauliflower pieces for 10 minutes. Or until the cauliflower is crisp and slightly coloured.  Repeat until all the cauliflower is cooked. Serve with siracha mayo or lemon yoghurt dressing
