Lemon, Blueberry and Hemp Oil Cake

Ingredients

  • 1¼ cups plain flour
  • ½ teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch salt
  • Zest from 2 lemons
  • ¾ cup fresh or frozen Blueberries 
  • ¾ cup caster sugar 
  • 2 large eggs room temperature
  • ¾ cup hemp seed oil
  • ½ cup natural or Greek yoghurt 
  • 2 Tbls milk
  • 1 tsp icing sugar to dust to serve 

Instructions

  1. Preheat oven to 175°C
  2. Coat a loaf pan with nonstick spray and line with parchment paper
  3. Whisk flour, baking powder, baking soda, and salt in a bowl
  4. Add lemon zest with granulated sugar in a bowl and mix together
  5. Add eggs
  6. Whisk in oil, yoghurt and milk
  7. Combine dry ingredients
  8. Stir through Blueberries p
  9. Pour everything into prepared pan
  10. Bake in the oven for 45 minutes or until a toothpick is inserted into the center comes out smooth
