3 eggs

70 g butter (softened)

100 g sugar

4 Mandarins zest and juiced (½ cup juice)

200 ml milk

3 passionfruit (¼ cup pulp with or without seeds) 

70 g self-raising flour 


Grease a 1 litre baking dish with a little oil. Preheat oven to 180°C 

Separate eggs and then beat egg whites until stiff. In a separate bowl beat sugar and butter, mandarin zest until light and fluffy add the egg yolks until well combined.  Add milk, juice and passionfruit pulp then stir in self-raising flour.  Fold through the egg whites until well combined.  Bake for 30 mins or until golden brown.  Sprinkle with a little icing sugar and serve with cream.
