This is a fabulous mostly healthy snack for the coming week of more home-schooling even better still the kids can make it themselves

Ingredients

  • 400 gm dates (pitted)
  • 100 gm peanut butter
  • 2 tsp vanilla essence
  • 3 tablespoons coconut oil (melted)
  • 80 gm dry roasted nuts
  • 30 gm rice bubbles or puffed quinoa
  • 150 gm dark chocolate

Method

1. Prepare a slice tin and line with a sheet of baking paper

2.In a food processor blend together dates, peanut butter, vanilla and melted coconut oil. Add nuts and pulse a couple of times. Stir through puffed rice or quinoa

3. Press mixture into the tin pressing down firmly around the edges as well to make a nice clean line.

4. In a heat proof jug or bowl add the chocolate and cook in a microwave for 1 minute intervals stirring in between bursts. Mine took 2 mins.

Spread chocolate evenly over the slice and refrigerate for 1 hour or until set. Cut into squares and keep in the fridge.
