Special Fried Rice 北

Here is a special way to use day old steamed/boiled rice and turn a few vegetables into an easy dinner winner on your Meat Free Monday   ✅

I started with 300 g cooked rice
4 tablespoons sesame oil
1 small onion
3 spring onions
1 cup frozen vegetables – peas, carrot, corn
3 eggs
3 garlic cloves crushed
3 tablespoons oyster sauce
3 tablespoons soy sauce
1 tablespoons hoisin sauce
Coriander leaves to serve

In a large pan with a lid or a wok, spray a little oil and add the well beaten eggs spreading them thinly all around the bottom of the pan.  Allow to cook for a minute then roll them off and place on a plate for later.
In the same pan add the oil and finely chopped onion and the whites of the spring onions. Save the finely sliced green part for later. Cook the onion well until translucent add the frozen veg and garlic and cook for a further 5 mins. Now add the sauces and work through the vegetables finely add the cooked rice and work the saucy vegetables into the rice. Taste and add the green spring onion and coriander leaves to serve.
