Cauliflower & Jerusalem Artichoke Soup – White Soup

This is my seasonal go to "White Soup" made with cauliflower, Jerusalem artichoke and potatoes and topped with crispy kale, garlic and cauliflower. Packed with lots of garlic, onion and olive oil it is a kick in the pants for winter bugs and full of flavour. 


Ingredients

  • 1 leek – sliced1 white onion diced
  • ½ Cauliflower
  • 300 g Jerusalem Artichoke scrubbed and roughly chopped
  • 1 potatoe peeled and cubed
  • 3 celery sticks roughly sliced
  • 6 cloves garlic chopped
  • 1 teaspoon cumin seeds
  • 1 litre good chicken stock
  • Olive oil
  • Salt and pepper to taste

Method

In a heavy based pot or pressure cooker, heat a glug of olive oil (¼ cup) add chopped leek and onion, saute until softened, then add roughly chopped garlic and celery, potato, artichoke and cauliflower. When chopping the cauliflower keep all the stem and roughly chop this to add at the same time to the pot. Stir until it has softened slightly (about 5 minutes). Add stock, a pinch of salt and pepper. If using a pressure cooker, allow the cooker to hiss for about 5-6 minutes. Switch off and let sit until the pressure drops.
If using a pot, simmer soup until the vegetables soften. Pop a lid on the pot and let it sit until it cools slightly. I usually make this the night before I need it and before reheating, blend it with a stick blender until the soup is smooth. Once blended the soup becomes beautifully creamy. I have served this soup in little espresso cups for dinner parties with a little truffle oil or with hot scones for lunch and topped with a little pesto or the topping above. It is delicious.

Soup Topping

  • 1 cup finely chopped curly kale
  • 2 garlic cloves chopped
  • 1 cup cauliflower florets
  • ½ teaspoon smoked salt
  • Freshly cracked pepper
  • Drizzle of olive or truffle oil
  • To make the topping heat 3 tablespoons of olive oil in a frying pan and add the cauliflower cook until golden, then add the garlic and kale. Cook for a further 4 mins add salt to taste. If you have extra use on salads or on toast with eggs!!
