A healthy-ish snack for the kids to get you through home-schooling

These are a fab afternoon pick-me’up. They’re low GI and have some great fibre to keep them satisfied until dinner. 

Ingredients 

Preheat oven to 170 degrees 

  • 125 gm butter 
  • 100 gm brown sugar 
  • 50 gm caster sugar 
  • 1 tsp vanilla essence 
  • 1 egg
  • 1/2 tsp cinnamon 
  • 70 gm chopped dark chocolate
  • 200 gm wholemeal self-raising flour
  • 60 gm rolled oats

Method 

Cream butter and sugar until light and fluffy 

Add egg and vanilla and continue to mix. Add chocolate pieces then cinnamon and flour and oats. Mix until combined.  Line 2 baking trays with baking paper and heap 2 teaspoon sized mounds of mixture on to the tray leaving 5 cms between them. 

Bake for 10-12 minutes or until they are golden brown. 

I never usually add storage tips for these as they only last a day or two at home. If you’ve successfully hidden some in your sock drawer then use a clip top container.
