Best ever banana cake with Creamy Lemon Frosting 🍋

1 1/2 cups self-raising flour
1 tsp bicarbonate of soda
3/4 cup sugar
3 bananas mashed
1 teaspoon cinnamon
½ teaspoon nutmeg
1/2 cup light olive oil
2 eggs lightly beaten

Preheat your oven to 150 °C degrees
Grease a ring tin and line base with baking paper.
Sift flour, spices and soda into a bowl. Add sugar.
Make a well in the centre and add mashed bananas, eggs and oil.
Mix until combined but don’t over beat the mixture.
Pour into the prepared tin and bake for 45 minutes or until a skewer inserted into the middle comes out clean.
Cool in tin for 10 minutes before tipping upside down on a cooling rack. Allow to cool before icing.

Lemon Frosting
60 g softened butter
250 g (1 – 2 cups) icing sugar
1 lemon zested and juiced
Save 1 teaspoon of zest to top on cake
3 tablespoons of cream

Mix all ingredients together until smooth.
