This delicious, easy Chicken broccoli, mushroom & bacon pasta bake is on high rotation in our house and has been a favourite for years. It is enough for a crowd or a hungry family of growing kids.  My magic ingredient is a packet of French onion soup which brings all the flavours together in a minute! You will love it 🥰


2 chicken breast fillets diced

3 rashes of bacon sliced 

1 brown onion chopped finely 

4 cloves garlic chopped

Bunch of broccolini 

1 packet of French onion soup 

1 cup of wine

1 cup of cream 

1-2 cups of water 

2 cups of grated pizza cheese

Fresh herbs parsley thyme tarragon finely chopped 

1 cup mushrooms sliced 

1 packet of pasta spirals


  1. Put a large pot of salted water on to boil for the pasta. Once the water has boiled cook the pasta for 10 mins. Preheat oven to 200 °C degrees.
  2. In a large oven proof pan heat 2 tablespoons of olive oil.  Add onions saute for 5 minutes.  Add bacon, chicken and garlic cook for 5-10 minutes. 
  3. Add the stems of the broccolini, and the mushrooms and stir through the soup mix.
  4. Add the wine first then add the cream and half the chopped herbs. Turn the heat down to low. 
  5. Add cooked pasta and 1-2 cups of pasta water.
  6. Stir the sauce through the pasta and top with grated pizza cheese and sprinkle remaining herbs.
  7. Bake for 10 mins or until the cheese is golden. Serve hot with a green salad.
