Delicious Overnight Chia and Coconut Pudding

Ingredients

½ cup of chia seeds (white or black)

1 ½ cups of coconut milk (or any milk of your choosing)

2 tablespoons of natural honey or maple syrup. (there are some great sugar free varieties on the market)

2 teaspoons vanilla extract

50 gm Fresh berries (blueberries, raspberries, strawberries)

Method

In a medium bowl place, chia seeds then pour over milk and honey and stir through. Add vanilla extract and stir until combined. Cover and place in the fridge overnight.  Add fresh berries to the bottom of the jar then layer with chia pudding.  Top with natural yoghurt or coconut yoghurt, more fresh berries or granola and a drizzle of local honey.
