Oh my lordy it sure is the weather for soup and scones as we are about to launch into summer…uhem …tomorrow 🙄

These scones are my beautiful Mums recipe but again altered by yours truly (you can imagine how much grief I used to give my teachers) 🤣🤣 you can add fruit to these scones, feta and spring onions or even fresh basil or a little cheddar. It is a great recipe for when friends call in as they take 20 mins from start to table xx

2 cups of SR flour
2 tablespoons butter
1 tablespoon sugar
Pinch of salt
1 cup of luke warm milk
1/2 cup of soda water
Dash of cream

Heat oven to 200°C (180-190 fan forced)
Rub butter in to the flour with your fingertips and add the sugar and salt
Mix through the liquid briefly with your hands until just combined. I am talking 6 ish turns as you dont want to over mix it.
If its a little wet add a sprinkle of flour to it, but its ok for them to be wetter than usual scone dough.
On a floured surface scrape out the dough and flatten it out a little.
With a scone cutter or knife cut out 9-12 scones and place onto a tray lined with baking paper.
Cook for around 12-15 mins until browned and risen. You can brush a little milk on top if you like but I’m a little too bish, bash, bosh for that.
